The BEST sourdough discard chocolate chip cookies

  • 130 g of chocolate chips

Instructions

  • In the bowl of a stand mixer with the flat beater, at medium speed: mix the butter, sugar, and light brown sugar until creamy.

  • Add the egg, sourdough starter, and vanilla, then mix again.
    115 g of active sourdough starter or discard, 1 egg, 5 ml of vanilla extract
  • In a separate bowl: mix the flour, salt, and baking soda.

  • Pour the contents of the bowl into the stand mixer and mix.
  • Add the chocolate chips and mix for a few seconds to incorporate.

  • Put the dough in a bowl, cover with plastic wrap, and place in the refrigerator for at least 1 hour, up to 3 days for a long fermentation.
  • Preferred option: take the dough out of the refrigerator, form balls of similar size, and place them on a baking sheet lined with parchment paper, then place in the freezer. Bake once the balls are firm, at 350°F or 175°C for 10-15 minutes.
  • Alternative: preheat the oven to 350°F or 175°C.
