Sourdough burger buns

Soft, homemade buns to create your favorite burger!

Ingrédients

  • 140 g of active sourdough starter
  • 220 g of water
  • 470 g of flour
  • 50 g of butter
  • 45 g of honey
  • 3 g of salt
  • 1 egg
  • 1 egg yolk for glazing
  • Sesame seeds optional

Instructions

  • Melt the butter and let it cool.

  • In a stand mixer with a hook: add the starter, water, flour, melted butter, honey, salt, and egg. Mix at medium speed for 5-10 minutes. You want a smooth and elastic texture.

  • Cover the bowl and let the dough rest for 6 to 8 hours at room temperature.
  • Optional: transfer to the refrigerator overnight (10 to 12 hours).
  • Flour the work surface: divide the dough into 6-10 balls (use a scale to be precise and determine what size burger you want).
  • Place the balls on parchment paper and cover with a towel, then let rest for 1 to 2 hours.
  • Preheat the oven to 350°F or 175°C.
  • Beat an egg yolk and brush it over the dough balls.

  • Optional: sprinkle sesame seeds on the dough balls.

  • Bake for 20 to 25 minutes until the buns are golden.
