Sourdough bagels

These bagels are dense and delicious, whether sweet or savory. They're one of our go-to options for breakfast at home, in the garden, or even for a picnic in the park.

Ingrédients

For the bagels

  • 410 g of bread flour
  • 300 g of active sourdough starter
  • 120 ml of milk
  • 30 ml of melted butter
  • 25 g of sugar
  • 2 eggs
  • 5 g of salt some spices or seeds for bagels

For the cooking

  • 3.5 l of water
  • 10 g of brown sugar
  • 10 g of baking soda

Instructions

  • In the bowl of a stand mixer, using the dough hook: mix all the ingredients.
  • Knead at medium speed for 5 to 10 minutes until you get a smooth dough that pulls away from the sides of the bowl.
  • Place the dough in a mixing bowl (or leave it in the mixer's bowl): let it rest and rise at room temperature. This can take 6 to 12 hours depending on your room temperature (see the recipe images for an idea of the texture and size).
  • Prepare a sheet of parchment paper on the work surface (optional: lightly flour it).
  • Divide the dough into 6 pieces (or more if you want mini bagels). Use a scale to be precise. I made 6 bagels of about 130 g each. Use your thumb to make a hole in the center.
  • Place the bagels on the parchment paper, cover with a towel, and let them rest for about 1 to 2 hours. They will puff up.

Cooking the Bagels

  • In a large pot or Dutch oven, bring 3.5 liters of water to a boil. Add the brown sugar and baking soda.
  • Preheat the oven to 425°F or 220°C.
  • Once boiling, place the bagels in the water without overcrowding the pot. Let them boil for 2 minutes on each side, then transfer them to a parchment-lined baking sheet.
  • (Optional): Sprinkle with a bagel topping mix or other seeds and spices.
  • Bake the bagels for 15 to 20 minutes. You want a golden bagel.
