Marbled sourdough madeleines

I loved plain madeleines so much that I wanted to try a variation: marble madeleines, just as delicious!

Ingrédients

  • 113 g of melted butter 1 stick
  • 120 g of sugar
  • 125 g of flour
  • 50 g of sourdough starter
  • 20 ml of milk
  • 10 g of cocoa powder
  • 5 g of salt
  • 5 ml of vanilla extract
  • 1 egg

Instructions

  • Melt the butter and then let it cool.

  • In the bowl of a stand mixer with the whisk attachment: mix the starter, milk, melted butter, egg, vanilla, and sugar.

  • In a bowl: mix the flour and salt.
    125 g of flour, 5 g of salt
  • Add the contents of the bowl to the mixer and mix until a smooth dough forms.
  • Divide the dough into two bowls (use a scale to have equal amounts).
  • In one of the bowls: add the cocoa and mix well.
    10 g of cocoa powder
  • Cover and then place in the refrigerator for 1 hour or up to 3 days for a long fermentation.
  • Preheat the oven to 190°C or 375°F.
  • Take a tablespoon of the plain dough and add it to the chocolate dough, then mix well to loosen it.
  • Place the doughs in the greased pan, adding a few spoonfuls of each color to the pan. You can mix slightly. The dough is thick and easy to shape by hand.
  • Bake for 10 to 15 minutes. The knife blade comes out dry, the edges of the madeleine are starting to turn golden: it's ready.
