Sourdough focaccia

Focaccia is an italian flatbread, it is soft and airy with a rich olive oil flavor.

Ingrédients

  • 100 g sourdough starter active
  • 480 g bread flour
  • 375 ml water
  • 5 g salt

Instructions

  • In a bowl: mix together flour and water. Then let it rest for 20 minutes.

  • Add the sourdough and the salt.

  • Do 4 stretch and fold every 30 minutes over 2 hours.
  • Cover the bowl with plastic wrap and let it rise on the counter for 4-6 hours until doubled in size.
  • Preheat oven at 425°F or 220°C.
  • In a glass pan, covered with a piece of parchment paper: drop the dough into the pan, drizzle some olive oil (about 15-20 ml). Then create dimples in the dough with your fingertips.

  • Optional: you can add fresh herbs, onions, tomatoes, salt...
  • Bake for about 30 minutes.
