Sourdough Manalas

Also called Mannele, these small buns shaped like little men are a December classic.

Ingrédients

  • 450 g of all-purpose flour
  • 145 ml of milk
  • 100 g of active sourdough starter
  • 100 g of butter
  • 2 eggs
  • 2 g of salt
  • 100 g of sugar
  • 1 egg yolk for brushing
  • a few chocolate chips for decoration

Instructions

  • In the bowl of the mixer, using the hook: add all the ingredients and mix for 5 minutes on medium speed. You will get a shiny, sticky dough.
  • Cover the bowl with plastic wrap and let rest for 6-8 hours at room temperature.
  • Generously flour a work surface, then place the dough on it. Roll it out and, using a cookie cutter, cut out little figures. Place them on a baking sheet.
  • Beat an egg and add a few drops of water. Then brush the buns with this mixture. Next, decorate: use chocolate chips to make the faces and arms. Let rest for 30 minutes.
  • Meanwhile, preheat the oven to 180°C (355°F).
  • Bake for 15-20 minutes (this depends on the size of the figures, so keep an eye on them).
