Sourdough pita bread

A very simple recipe to obtain a delicious flatbread you can stuff with anything.

Ingrédients

  • 100 g sourdough starter (active)
  • 225 ml water
  • 250 g bread flour
  • 100 g whole wheat flour
  • 35 ml olive oil
  • 15 g sugar
  • 5 g salt

Instructions

  • In the bowl of a stand mixer, with the hook attachment: place all the ingredients and mix about 5 minutes.

  • Cover the bowl with plastic wrap and let the dough ferment for 4-6 hours.
  • Make 8 balls of equal weight and place them on a parchment paper to rest for 15-20 minutes.
  • Roll each ball of dough with a rolling pin into 6" circles.
  • Preheat the oven with a cast iron skillet inside at 450°F or 230°C.
  • Put the circle of flatten dough in the oven for 5 minutes, you can flip them halfway through.
