Sourdough madeleines

These madeleines have an absolutely perfect taste. The combination of vanilla and sourdough with this firm texture and a reasonable portion has become my favorite little snack.

Pour 12 madeleines

Ingrédients

  • 113 g melted butter 1 stick
  • 120 g sugar
  • 125 g flour
  • 50 g sourdough starter (active or discard)
  • 20 ml milk
  • 5 g salt
  • 5 ml vanilla extract
  • 1 egg

Instructions

  • Melt the butter and then let it cool. In the bowl of a stand mixer with the whisk attachment: mix the sourdough starter, milk, melted butter, egg, vanilla, and sugar.

  • In a bowl: mix the flour and salt.
    125 g flour, 5 g salt
  • Add the contents of the bowl to the mixer and mix until you get a smooth dough.
  • Cover with plastic wrap, then place in the refrigerator for 1 hour or up to 3 days for a long fermentation.
  • Preheat the oven to 190°C or 375°F.
  • Pour the mixture into the previously buttered mold. Bake for 10 to 15 minutes. The knife comes out clean, and the edges of the madeleine start to brown: it's ready.
