Sourdough cookies: rye and chocolate chips

Delicious cookies with levain and rye flour for an original taste.

Ingrédients

  • 226 g of softened butter 2 sticks
  • 115 g of sourdough starter active or leftover starter
  • 100 g of brown sugar
  • 150 g of granulated sugar
  • 250 g of flour all-purpose or bread flour
  • 100 g of rye flour
  • 1 egg
  • 5 g of baking soda
  • 2 g of salt
  • 5 ml of vanilla extract
  • 130 g of chocolate chips

Instructions

  • In the bowl of a stand mixer with the flat beater, at medium speed: mix the butter, sugar, and brown sugar until creamy.

  • Add the egg, sourdough starter, and vanilla, then mix again.

  • In a separate bowl: mix the two flours, salt, and baking soda.

  • Pour the mixture into the stand mixer bowl and mix.
  • Add the chocolate chips and mix for a few seconds to incorporate.

  • Place the dough in a bowl, cover with plastic wrap, and refrigerate for at least 1 hour, up to 3 days for a long fermentation.
  • Preferred option: take the dough out of the refrigerator, form balls of similar size, and place them on a baking sheet lined with parchment paper, then put in the freezer. Bake once the balls are firm, at 350°F or 175°C for 10-15 minutes.
